New England Beef Stew (Instant Pot)

Hearty and satisfying with carrots, potatoes, onions and beef stock. The recipe is divided into three steps: for step one, the meat is cooked with the onion. For Step two, the potatoes and carrots are cooked by themselves. For step three, cornstarch is added and the meat and vegetables are combined.

Ingredients:

Step One:

2 pounds beef chuck roast, cut into 1 inch cubes

2 teaspoons sea salt

1 teaspoon freshly ground black pepper

1 medium onion, small diced

2 tablespoons canola oil

1 tablespoon tomato paste concentrate (2x)

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

2 cloves finely minced garlic

2 cups beef stock


Step Two:

3 large potatoes, cut into 1 inch cubes

1/2 pound carrots, peeled and cut into thick slices

1 tablespoon tomato paste concentrate (2x)

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

2 cloves finely minced garlic

1 tablespoon vinegar

2 cups beef stock


Step Three:

2 tablespoons cornstarch

2 tablespoons water

Salt and pepper to taste


Instructions

For Step One:

  1. Toss the beef cubes in the sea salt and pepper. Using the Saute function on the Instant Pot set to high, brown half the meat in a tablespoon of canola oil. Remove from the pot and brown the other half in another tablespoon of oil. Set aside.

  2. Using the Saute function set to medium/normal, cook the onion until translucent. Add the tomato paste, Worcestershire sauce, dried oregano, garlic, beef stock and beef. Stir well.

  3. Seal the instant pot and cook on Pressure Cook High for 25 minutes. Let naturally release pressure for 10 minutes.

  4. When done cooking, empty the mixture into a large bowl.

For Step Two:

  1. Place all ingredients into the pressure cooker. Seal the instant pot and cook on Pressure Cook High for 5 minutes. Immediately after cooking, release pressure.

For Step Three:

  1. Mix the cornstarch and water in a small bowl. Add to the potato/carrot mixture and stir well.

  2. Add the mixture from Step one to the mixture in Step two in a large bowl. Stir well. Adjust for seasoning as needed with salt and pepper.


Makes 3-4 servings.
